apple pie

This Sunday's pie was apple.

Good ol' apple.

Apple was the first pie I ever made. She holds a special place in my heart. I wish you could smell the pictures....because it smelled all apple-lemon-cinnamonie in my kitchen this morning. It was delightful.




Thomas was the first to rise this morning. So he joined in on the pie making. He even made his own mini apple pie. I asked him that if God calls him to be a dad, would he make a pie every Sunday and call me and pop to come over to eat it. He said, sure. Thanks honey.

I love, love, love that I have all my pantry goods in these jars now. I think I'm up to fifteen of these babies.










It was such a beautiful evening tonight that we sat out on our porch and ate our pie. We needed to get out of the house for a few moments.....and escape the bedtime chaos going on inside. Just by sitting outside changed everyone's mood a bit. Watching Evelyn with her mouth wide open, waddling and swinging her arms back and forth, while moving from person to person snatching bites was enough to change my mood!!





And here she is coming downstairs this morning. She had slept with her baby in her crib and was carrying her again this morning. She stood right there for the longest time just frowning at us as we all were chanting our good mornings to her.

I'm guessing by the look she had on her face and the messy harido she was sporting, that she must have been up all night with a fussy newborn.

What a sad anniversary today was. Nine years ago, thousands of people's lives changed because of hatred. Today was the anniversary of 9/11. TJ and I spent the day up in Omaha. We had gotten tickets to listen to Father Corapi speak on Spiritual Warfare. It was so awesome to hear him speak....and to get to see him in person. He is such a powerful, holy man.

So, the conference was from 9:30am until 5:00pm. An all day event. When I first asked TJ if he wanted to go, he said, sure. We both enjoy listening and watching Father Corapi on EWTN. I had purchased the tickets well in advance. The closer and closer it got to the event, we knew we were going to have to find someone to watch our four darling dear ones. One week before, we still had no one to watch them. We thought about giving the tickets away, or me going by myself, but I didn't really want to do that. Then our dear friends the Vackes asked us if they could take all our children for the day, so we could go!! Bless you Craig and Kim! That was nine children they watched for the day!

Now, to the point of this post.

It's taken me nine years of our marriage to start to figure some things out. I'm learning to LET GO of expectations, learning to ACCEPT situations, and learning to ENJOY the moments while in the midst of them.

With that said, TJ does not like to read. He doesn't like to change diapers. He doesn't like routine. And he's definitely not a go to a conference all day on your day off kind of guy. ESPECIALLY on a Husker Football Saturday. The beautiful thing about him though, is that...... he will. He will try and read something that I've asked him to read. He will change diapers if I ask him, and he was willing to go sit at a conference with me on a beautiful Saturday. And he will do it happily. He's that kind of man. I on the other hand, when I have to do something that I don't want to be doing.....I let him know about it. (if you know what I mean.)

We ended up compromising. Giving and taking. I knew how much he wanted to watch the Huskers play, he knew how much I wanted to hear Father Corapi, and so we both let go a little. He sat there and thoroughly enjoyed listening to Father speak. We had decided to go to the conference from 9:30-12:30 and listen to his first two talks. Then we would leave and go to the Upstream for lunch and watch the game. When we realized that there was a 45 minute break before his second talk, I looked over at TJ and could just read his mind.....and so, because I love him and truly knew how much he wanted to watch the game, I said, let's go. And oddly enough, I felt more joy by us leaving that conference than if we would have stayed. We walked to the restaurant on a gorgeous, sunny, late morning. Together. The two of us. And that's where I wanted to be more than anywhere else. More than listening to Father Corapi. I was in heels, and so I took off my shoes as we strolled down the Old Market together.




When we got to the restaurant there was no one there yet. We found a perfect spot at the bar, right in front of a big screen TV. We drank a beer, had lunch and watched the game together.




And then all of a sudden in came a mad rush of people all trying to get a table for lunch. We look at each other and realize that it is the lunch break from the conference judging from the fact of how many priests were there. Had we waited until 12:30 to leave, we definitely would not have been able to sit at the bar, right in front of the TV together. We just smiled at one another. TJ was so happy, giddy really. He kept saying how this was the perfect day. That how could it get more perfect than listening to Father Corapi, walking together through the Old Market, sitting at the bar having lunch, watching the Huskers, and to top it all off, it was a simply gorgeous day. Now it must have been TJ's giddiness that led him to walk into a little boutique on the corner. He said we should go in and just look for some sandals for the both of us. I have been wanting a fall dress coat, but always seem to find other ways to spend extra money. There were coats in the way over priced boutique. I tried some on. And I think because my husband was just so darn happy, he told me he wanted to buy me a coat.....a coat that was way too expensive!!

So there.

Marriage is not about yourself. It's about your spouse. Everything we do should be for the other person. Our first priority in marriage is to pray for our spouse to get to heaven. My focus should always be TJ. No matter what. That is how I want to live out my marriage. No keeping score, no making everything even. It's about things NOT being even, tasks NOT being divided up equally, it's about NOT getting what I always want. It's about giving in and letting go. I hope to teach my children this.

So when people ask me how was Father Corapi? I say it was wonderful.


It truly was.

It was a wonderful day.


I had more fun by letting go of MY expectations, and giving in. I had a wonderful day with my husband. Maybe God knew that we needed to spend that time together more than we needed to listen to Father Corapi speak for eight hours. Maybe, just maybe, God knows more than I do!

I totally dropped the ball on Friday by not having a C snack. I had intended to make Cheerio bars, but it never happened. The kids were confused why we had left over Bugles for snack instead. "But mom, bugles don't start with a C...."

so thankful for my rear view mirror

I'm driving in Sherman a lot these days. I've gotten used to it really. Today while driving I looked through my rear view mirror to see Evelyn hitting herself in the head with both hands and then smiling, over and over and over again. As I am driving while looking back in that mirror I'm smiling. Realizing how grateful I am to have that rear view mirror. I have it set perfectly so that as I look back through it, I see these two perfect little people just right. I see both George and Evie's little faces right in the center of my mirror. I think about how much I would miss if I didn't have that mirror.

These are just a few of the darling things I get to look at every day while driving to and from school. And yes, I do watch the road while driving, I've just gotten good at driving and watching them at the same time!!

football season, here we come!
Watching the game through Thomas and George's passes they are throwing downstairs, eating chili and cinnamon rolls, napping on the couch while listening to the game in the backgroung, smelling my good smelling candle (for fall it's hazelnut cream) that is burning on the counter, eating brats, TJ and Thomas running plays in the basement....all these are a tradition each fall when football season begins.
And I love it.

cherry crumble pie

When I woke up on Sunday morning, I thought for a moment that this may very well be the FIRST Sunday of NOT making a pie in a couple months. But....

Never fear, we got it done.

By we, I mean my sister Laura and I. We were staying at their house for the weekend. To make a long story short, and so as not to spoil this beautiful post with how awful my children slept at their house, lets just say that we did not get up super early to bake on Sunday morning. Thank you to my husband who took all four of them "out for a drive" so Laura and I could make a pie!

And thank goodness this was THE EASIEST pie I have ever made. Seeing as Laura had already done all of the work beforehand. The crust was already made and in the fridge, and she had already canned the cherries this summer. Making for one super-duper-easy-pie!
So as she is rolling out the crust I notice that her rolling pin is super squeaky. I asked her where she got it.....I come to find out that she got my grandma Gladys' rolling pin after she passed away. No fair. Where was I? Why can't I have her rolling pin? Do you know how much I would love, love, love, to have that? I stomped my foot once or twice and then my tantrum was over. It is pretty cool to have our grandma's rolling pin still rolling away in our family. Wonder how many pie crusts and cinnamon rolls that thing has rolled over?

We had to finish the blueberry custard pie first that was in the pie plate we needed.

Laura makes the best cherry pie filling I have ever tasted. In the summer, she and a friend go picking cherries somewhere in town and then can them. Oh my, it is so good. WAY better than using the canned cherries from the store.





So, since I can't take ANY credit for this pie whatsoever, I will tell you that I did mix the crumble part for the top. I think I am going to top every single pie I make from now on with this. Oatmeal, brown sugar, flour and of course....butter = heaven.



The pie turned out so yummy! Thanks Laura for being my baking partner now for two weeks in a row! And I'm happy that you have grandma's rolling pin. Really, I am. You are an outstanding baker who knows a whole lot more than me!
